Who disposed of the garbage in medieval times? And more questions about people in medieval times?

I need a list of people ie Knights, serfs, peasants, etc. and their roles in medieval times. What they did and what are they known for. I also need to know who disposed of the garbage in medieval times as well and who delievered things ie like food/mail. THANKS SO MUCH! =)
